Ingredients

  • 1 1/2 cups (180g) whole wheat flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 2 medium apples, peeled and diced
  • 1/4 cup (60g) honey or maple syrup
  • 1/4 cup (60ml) unsweetened applesauce
  • 2 large eggs
  • 1/4 cup (60ml) milk (any kind)
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat Oven
    Preheat your oven to 350°F (175°C). Grease or line a muffin tin with paper liners.
  2. Mix Dry Ingredients
    In a large bowl, whisk together whole wheat flour, baking powder, baking soda, cinnamon, and salt.
  3. Combine Wet Ingredients
    In another bowl, mix honey (or maple syrup), applesauce, eggs, milk, and vanilla extract. Stir in the diced apples.
  4. Combine Wet and Dry
    Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
  5. Fill Muffin Tin
    Spoon the batter into the muffin tin, filling each cup about 3/4 full.
  6. Bake
    Bake for 18–20 minutes or until a toothpick inserted in the center comes out clean.
  7. Serve
    Let the muffins cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.

Tips

  • Add chopped walnuts or raisins for extra texture.
  • These muffins freeze well, so you can make a big batch and enjoy them later.
