Ingredients

  • 1 ripe banana
  • 1 cup (90g) rolled oats
  • 2 eggs
  • 1/4 cup (60ml) milk (any kind)
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon vanilla extract
  • Pinch of salt
  • Butter or oil for cooking

Optional Toppings:

  • Maple syrup
  • Fresh berries
  • Sliced banana
  • Peanut butter or yogurt

Instructions

  1. Blend the Batter
    In a blender, combine the banana, oats, eggs, milk, baking powder, vanilla, and salt. Blend until smooth.
  2. Cook the Pancakes
    Heat a non-stick skillet or griddle over medium heat. Lightly grease with butter or oil. Pour small rounds of batter and cook for 2–3 minutes per side until golden and fluffy.
  3. Serve
    Stack the pancakes and top with your favorite toppings. Serve warm!

Tips

  • Make it gluten-free by using certified GF oats.
  • Add cinnamon or nutmeg for extra flavor.
